Simple Summer Beauty Salad
Salad-
½ piece of fennel finely sliced
1/8 of a purple cabbage finely chopped
¼ cup of blueberries, washed
½ a ripe avocado
5-6 stems of kale, leaves only, chopped well
1 small- medium size sweet potato
¼ cup of almonds roughly chopped
pinch of salt
1 teaspoon lemon
Dressing-
1 tablespoon of hemp seed oil (or flax seed oil)
1 teaspoon of good quality balsamic vinegar
1 teaspoon of lemon juice
1 drop of lemon myrtle essential oil, edible.
Firstly, start by chopping the sweet potato into small cubes and steaming until soft. Set aside.
In a large bowl, place the finely sliced fennel, cabbage, and kale. Add a pinch of salt and teaspoon of lemon juice and mix well with your hands, squeezing gently to wilt the kale slightly and soften the cabbage and fennel.
Add the blueberries and almonds and mix well.
Lastly add the sweet potato and mix gently.
For the dressing, add all of the ingredients to a small bowl or cup and whisk to combine.
Pour the dressing over the salad and mix well.
Spoon the salad onto two plates and top with the sliced avocado.
