Summer is indeed in full swing. It is a month of incredibly delicious, luscious produce and during these warmer months, there is nothing better than big fresh salads, a slice of cold watermelon, or fresh stone fruit chopped up over cereal for breakfast. Summer produce is vibrant, juicy and full of flavour. While in cooler months fresh produce is often turned into warming soups and stews, in Summer the produce can be easily devoured just as it is- ripe juicy tomatoes that explode in your mouth, succulent sweet mangos and all the aromas of fresh herbs that brighten up any salad or meal.

Summer Gazpacho Soup

This will become your favourite summer meal! Easy to make, full of flavour and loaded with nutrients and living enzymes, your tastebuds and body will love this bowl of goodness.

(Makes 2 serves)

Blend-

3 ripe tomatoes chopped

1 small orange juiced

1 lime juiced

1 tablespoon apple cider vinegar

2 tablespoons olive oil

1 tablespoons tamari

¼ cup fresh coriander

¼ cup of basil leaves

1 teaspoon ground cumin

½ teaspoon salt

½ teaspoon chili

¼ cup of water

 

Chop

10 cherry tomatoes halved

½ cucumber chopped finely

¼ capsicum chopped finely

1 shallot chopped finely

½ a ripe avocado cubed

Coriander and basil to garnish

 

Method:

Blend all of the top ingredients in your blender until smooth.

Pour into two bowls and then evenly distribute the chopped vegetables on top of each bowl.

Garnish with coriander and basil leaves.
